Rub the zest of the lemon. Put the quark in a bowl and stir until smooth. Add lemon zest. Squeeze the lemon and stir the juice into the quark as well. Season with salt and pepper. If you want, you can add finely chopped chives. If the dip is too thick, it can be stretched with a little cream.
Tastes good with raw vegetables, fondue, baked potatoes or simply on bread.
