Instructions

  1. Cook the noodles in salted water until they are al dente.
  2. Meanwhile, dice the onion and halve the leek lengthways and cut into slices. Then wash the leek in a colander and allow to drain. Chop the chives.
  3. Beat the eggs in a mixing bowl with a whisk and season with salt and a little pepper. Don`t use too much salt because the bacon is already salty.
  4. Heat some oil in the pan and fry the leeks, onions and bacon. When the onions are translucent, pour the beaten eggs over them, let them thicken and scrape off the bottom with a spatula over and over again. When everything is firm, but still shiny, add the pasta, which has now been drained, to the pan and stir. Season everything again with salt and pepper and add the finely chopped chives.
