Knead the flour with cold butter in pieces, quark and a pinch of salt and let the dough rest for 30 minutes.
Finely chop the ham and mix with the crumbled blue cheese.
Preheat oven to 175 degrees.
Roll out the dough on a lightly floured surface to a square of approx. 40 x 40 cm (does not have to be exact!) And cut into 4 squares. Divide this into 8 triangles. Put some filling in the middle of each of the 8 pieces. Roll up from the broad side, bend into croissants and place on a baking sheet lined with baking paper. Brush with beaten egg and sprinkle with sesame seeds and / or coarse salt. Bake for about 15 minutes.
The croissants taste best fresh out of the oven. But we still like to eat them cold. We prefer to eat them just like that, but cheese canapés or green salad also go well with them.
We have already prepared it with hard cheese cubes, it tastes delicious too!
