Boil the potatoes in their skins, peel them, let them cool and then dice them.
Heat a little oil in a pan and add the herb butter. As soon as the butter has melted, add the potato cubes to the pan and reduce the heat a little. Salt, pepper and, if you like, chop fresh herbs and add to them.
Tastes great as a side dish but also as a main course with buttermilk.
