Instructions

  1. Cooked grated potatoes 1-2 days old are carefully worked into a firm dough with the other ingredients.
  2. Roll with a little flour into finger-length and finger-thick sausages.
  3. Bring salted water to the boil in a large high pot and first cook half of the potato noodles in it (with gently bubbling water) until they float on top. Then take it out with a strainer and place on a hot plate. Cook the second half in the same way and serve.
  4. Now melt them over with finely chopped onions steamed in butter (lettuce goes very well with this)
  5. or you can roast them in a pan with a little butter until golden (this goes best with a fine sauerkraut).
