Put the quark in a bowl and stir with the cream and lemon juice until smooth. Peel the garlic clove, press through and add to the quark mixture. Season with pepper and salt and stir everything well.
Wash the herbs, pat dry and finely chop. Save some chives for the garnish. Mix the remaining herbs into the quark.
Let it steep briefly, if necessary season with salt, pepper and garlic and sprinkle with chives.
