Preheat oven to 175 degrees. Roughly chop the herbs and place in a mortar, mix with a little salt and grate. Gradually pour in the olive oil until a thick paste is formed.
Spread the herb paste evenly over the top of the salmon fillets, then wrap each fillet in 2 slices of ham.
Bake for about 20-25 minutes. Serve immediately on preheated plates.
