Cut herring fillets into 2 cm wide pieces. Wash, core and dice the apple. Peel the onion and cut into thin rings. Dice the pickles. Wash the lemon with hot water and rub the peel. Wash dill, shake dry and chop.
Mix the sour cream, yoghurt, heavy cream, lemon zest and dill. Mix in the prepared matjes, apple, onion and pickled cucumber and season with salt, pepper and lemon juice.
