Instructions

  1. First drain the layered cheese in a sieve, then mix it with the baking soda in a bowl. Let sit for 10-15 minutes so that the baking soda can work.
  2. Meanwhile, dice the hand cheese and slowly melt it together with the butter in a saucepan over the lowest heat. Stir in the cream until it has combined with the mass. Keep the heat low.
  3. Then add the layered cheese to the mixture, tablespoon at a time, and stir in carefully. When all of the layered cheese has been stirred in, stir in the fresh organic egg yolk. Make sure that the egg is actually organic, as it is not heated to high temperatures. But if it is too tricky for you, you can do without the egg.
  4. Be patient while stirring. The heat must not be increased, otherwise the cooked cheese will not succeed and will become too runny! It`s ready as soon as it drips thickly from the spoon.
  5. Fill the cooked cheese into glasses while still warm and leave to rest in the refrigerator overnight. The longer the cooked cheese rests, the more intense it becomes in taste.
  6. Take out of the fridge about half an hour before serving and garnish with the music.
  7. In the meantime, prepare the music. To do this, peel the onions and cut into fine cubes. Then mix with oil, vinegar, salt and pepper and let rest for half an hour at room temperature. If you like, you can mix in the caraway seeds before serving or serve it separately.
  8. Serve the cooked cheese with music on fresh farmer`s bread.
  9. The recipe is enough for 4 glasses of 250 ml each.
