Instructions

  1. First we wash and dice all the vegetable ingredients except for an onion. Then peel and slice the potatoes.
  2. Then we heat the lard to fry the diced bacon in it. When this is done, we also add the diced vegetables and fry them briefly. Add the potato slices and then pour the meat stock on top. Then stir in the bay leaf and season everything with salt and pepper.
  3. Let the whole thing boil for 30 minutes. Meanwhile we cut the remaining onion into rings and the white bread into cubes and toast the whole thing with a little butter in a pan.
  4. After thirty minutes, finely chop the boiled soup with a pounder or a hand mixer and finally stir in the cream. Finally, place in a pre-warmed soup tureen or soup plate and garnish with the white bread cubes and onions as desired.
