Place the ladyfingers side by side in a large baking dish or flat container and soak them in the apple juice. Spread the applesauce evenly over the top.
Whip the cream until stiff and mix with the quark. Put the cream quark on the applesauce and sprinkle with cinnamon sugar. Let it steep for at least 3 hours so that the ladyfingers become soft.
