Bring the sugar to the boil with the orange juice. Mix the collected mandarin juice with the pudding powder. Stir the mixture into the boiling juice and cook for 1 minute.
Let cool a little, then mix the drained mandarins with the pudding. Possibly put some mandarins aside for decoration. Let the pudding cool for 1 hour, then stir in the whipped cream well with the electric hand mixer (do not just fold in).
Spread the pudding cream on bowls. Serve garnished with the remaining mandarins.
