- Cut the chicken fillet and 800 g of pork into chunks suitable for grinding.
- Grind the chicken and 800 g of pork together using a meat grinder.
- Cut the remaining 400 g of pork into small cubes.
- Mince the 4 garlic cloves using a meat grinder or fine mincer.
- In a large bowl, combine the ground meat, pork cubes, minced garlic, 2 teaspoons salt, 1 teaspoon chicken seasoning, and 0.5 cups carbonated water.
- Mix thoroughly for 2-3 minutes until well combined.
- Refrigerate the mixture for 30 minutes.
- Rinse the pork intestines in cool water.
- Fit the intestines onto a sausage stuffer attachment (or use a plastic bottle neck if no stuffer is available), and tie a knot at one end.
- Fill the intestines with the meat mixture using the stuffer, leaving about 1 cm of space at the end to prevent bursting.
- Tie a knot at the other end to seal.
- Pierce the sausages in several places with a needle to prevent splitting during cooking.
- Arrange the sausages on an oven rack.
- Bake in a preheated oven at 180 °C (356 °F) for 1 hour until the internal temperature reaches 74 °C (165 °F).
