Instructions

  1. For the gnocchi:
  2. Boil, peel and mash the potatoes. Then mix with the rest of the ingredients until a smooth dough is formed that no longer sticks to the fingers, add a little more flour if necessary. Then shape the dough into gnocchi.
  3. Bring salted water to the boil and add the gnocchi. If they swim up for about 2 minutes, they are done. Cooking this amount takes about 15 minutes.
  4. For the sauce:
  5. Cut the smoked tofu, mushrooms and onion into small pieces.
  6. Fry the smoked tofu in a pan with a little oil, then set aside. Fry the onion and mushrooms in the same pan and deglaze with the rice cream.
  7. Boil the spinach, take it out of the pot, chop it up and add it to the sauce. Season the sauce with the spices.
  8. Just before serving, add the crispy smoked tofu to the sauce and mix in. Serve hot with the gnocchi.
