Bring two liters of water to a boil in a saucepan or kettle.
Rub the lemon peel and place in a tea strainer together with the mint. Pour boiling water on top. The water should then cool for two minutes so that it reaches around 80 ° C.
Now add the green tea to the mixture of water, lemon peel and mint and let it steep for about 5 minutes.
Pour the tea mixture into a teapot, sweeten with cane sugar as desired and let it cool.
When the tea has cooled, the lemons can be squeezed and poured into the mixture.
