Potatoes – 150 g
Onions – 100 g
Carrots – 100 g
Celery – 1 stalk
Pickles – 100 g
Brine – 100 g
Tomato paste – 50 g
Vegetable oil – 40 g
Water – 2.3 l
Salt
Bay leaf
Peppercorns
Coriander seeds
How to cook a rassolnik with barley in a multicooker:
Grate carrots on a coarse grater, or cut into small cubes
Chop pickles the same way as carrots
Chop onions
Heat oil in a large pot over medium heat. Add onions, carrots, pickles, tomato paste, and a pinch of salt. Sauté for 15 minutes, stirring occasionally. Add brine in the last 5 minutes. Transfer vegetables to a bowl.
Cut potatoes into small cubes
Rinse pearl barley under warm running water until the water runs clear
Grate celery stalk finely (roughly 1 teaspoon)
Add beef, pearl barley, 2.3 liters water, bay leaf, peppercorns, coriander seeds, and 1 teaspoon salt to the pot. Bring to a boil, then reduce heat to medium-low and simmer for 1 hour 50 minutes
Add potatoes, sautéed vegetables, and grated celery. Continue simmering for 30 minutes until potatoes are tender
