Homemade turkey ham with quail eggs and green peas are perfect for any occasion. The recipe is useful for those on a low-carb or high-protein diet. Turkey meat is considered dietary, superior to chicken, and is hypoallergenic.

Grind half of the specified rate of turkey fillet in a blender or twist twice through a meat grinder. Cut the rest into small cubes.
Transfer the prepared minced meat and chopped poultry to a bowl. Pour in a little water, add salt and knead the minced meat well so that all the moisture is absorbed into the minced meat. Leave the prepared mixture in the refrigerator overnight.
Add spices, frozen green peas to the chilled minced meat, after blanching it for a couple of minutes in salted boiling water, and then immersing it in cold water. Stir so that all ingredients are evenly distributed among themselves.
Boil the quail eggs for a minute, turn off the heat and leave in boiling water for another minute. Then transfer to cold water. Peel them carefully. Spread half of the minced meat on a heat-resistant film for baking. Along the entire length, in the center, layout boiled and peeled quail eggs.
Spread the remaining minced meat on top of the eggs. Roll everything into a tight roll and secure the edges of the film.
Fix the roll on top with an elastic mesh. You can buy it at the pharmacy Preheat the oven to 90 degrees. Bake until the temperature inside the roll is 80-85 degrees (if there is a thermometer). In time, it will take about 1.5 hours. A low baking temperature will help keep the color and juiciness of the ham. Cool the finished ham and store it in the refrigerator.
