First carefully brush the salmon fillets with a little honey on both sides and then drizzle with lime or lemon juice. Then roll carefully in the flour so that they are completely covered.
Heat the oil vigorously in a pan and carefully slide the salmon fillets into it. First fry until golden brown on all sides over medium to high heat, then turn back on the highest setting towards the end, add a spoonful of honey to the pan (it will then caramelize and stick to the salmon) and deglaze everything with lime or lemon juice.
The fish goes particularly well with fresh rosemary potatoes.
