Instructions

  1. First a mayonnaise is prepared. The egg yolk and the oil should be at the same temperature (room temperature is best). Beat the egg yolks with a little salt so thoroughly that they are thick. Then add the oil drop by drop while stirring.
  2. After half the amount of oil, add the vinegar and stir well. Then stir in the rest of the oil. Should the mayonnaise curdle, add 1 teaspoon of cold water drop by drop.
  3. When the mayonnaise is ready, mustard, honey and the dill tips are added. While adding the honey and mustard, keep tasting to see if the spiciness and sweetness are in harmony. The sauce goes very well with smoked fish (e.g. trout, salmon) or baguette.
