Cut the cored and peeled piece of melon into large pieces. Puree the melon, cream cheese and lemon juice together. Please puree the apricots separately with the juice from the can.
Season the melon mixture with the honey to your own taste and pour into pretty glasses with ice cubes. Slowly add the pureed apricots and stir as you like. This creates a beautiful marbled pattern. Decorate the glasses with mint and serve immediately.
