Core the melon and cut into small pieces, as well as the peaches. Possibly puree the fruit a little.
Put everything in a high saucepan and mix with the desiccated coconut and the preserving sugar. Bring to the boil while stirring and then simmer for 5 minutes (keep stirring). Finally stir in the Malibu.
