Instructions

  1. Halve the vanilla pod lengthways and scrape out the pulp. Drain the cherries and collect the juice. Caramelize the sugar in a saucepan *, deglaze with the cherry juice and the cherry nectar and bring to the boil. Add anise, cinnamon, lemon peel, vanilla pulp and pod, reduce to half the temperature for approx. 10 minutes over high heat.
  2. Remove the cherry sauce from the heat. Take out the cinnamon, anise and vanilla pod and stir in the cherries.
  3. Put 1 - 2 scoops of vanilla ice cream in glasses and pour the cherries over them, decorate with cinnamon sticks.
  4. * Caramelize: refers to the strong, dry heating of sugar, which turns it into caramel, resulting in a light yellow to dark brown, glossy mass with typical roasted aromas
