Instructions

  1. This is a recipe from my former Chinese colleague, Tang - it has always been a hit at parties!
  2. Cook the pasta according to the instructions, drain well, mix well with about 3/4 amount of the sesame oil and let cool (or put in the refrigerator).
  3. Also put the sprouts in boiling water, but under no circumstances leave them in the water for more than 4 minutes, drain well, mix with the rest of the sesame oil and leave to cool too.
  4. Then mix the pasta and sprouts well.
  5. For the pasta sauce, mix the following ingredients together well and very smoothly:
  6. Soy sauce, rice vinegar, sugar, sesame paste (the real Chinese, if possible, tastes different than the oriental tahini), finely chopped garlic, spring onion rings and chili oil.
  7. Now simply add the sauce to the cold pasta and sprouts mixture, mix very well - and that`s it!
  8. You can also add meat to this variation of the spicy Szechuan noodles if you want. To do this, either cook some beef or chicken and then cut into long thin strips (in the form of sprouts) and mix with the noodles.
  9. PS: You can easily make red chilli oil yourself: put red dried chilli flakes in hot oil, boil it up briefly, let it cool down, and let it steep for at least a few days.
