Instructions

  1. Peel the shallots and cut into fine cubes, halve, core and chop the chilli pepper. Peel the carrots and cut them crosswise into thin slices.
  2. Heat the olive oil in a non-stick pan and gently fry the shallots and chilli in it. Sprinkle with vanilla sugar and briefly continue to fry, then add the carrot slices and fry for about 15 minutes, stirring frequently, lightly salt.
  3. Mix the Cointreau, balsamic vinegar, soy sauce and add a pinch of ginger. If you want even more spiciness, add a little sambal oelek. Add the mixture to the carrots, stir and let simmer for a few minutes over a low heat.
  4. Sprinkle with coriander and serve.
  5. Tastes very good with spicy meat dishes, e.g. poultry or veal, or with pork tenderloin.
