Prepare all ingredients. It is most convenient to use toast bread, already sliced, but you can also make hot sandwiches from a regular loaf.
Prepare the filling. Grate cheese on a coarse grater. Wash the dill and green onions, dry, and chop finely with a knife.
Combine feta cheese, green onions, and dill in a deep bowl. Beat in an egg.
Add salt and pepper. Stir.
Cut the squares of toast bread diagonally. Spread the cheese and greens filling on the resulting bread triangles.
Heat vegetable oil in a skillet. Place the sandwiches in the skillet with the filling facing down. Fry over medium heat for about 1-2 minutes.
Flip the croutons over and brown for about 1 minute. The filling keeps well on the bread.
Hot sandwiches with feta cheese and green onions are ready. Put the croutons on a plate, garnish with fresh herbs, and serve.
