A layered hot sandwich filled with sausage, cheese, eggs, tomatoes, and green onions is a great option for a hearty snack or nutritious breakfast. Rinse and dry the tomato and green onions. Cut the bread into slices about 1 cm thick and the sausage and cheese into thin slices. Such hot sandwiches are prepared very quickly, so it is best to turn on the oven in advance to warm up to 200 degrees.
Cut out the crumb from two slices of bread, keeping about half a centimeter along with the crust so that you get bread “frames”.
Line a baking sheet with baking paper and top with mustard-smeared bread slices. Place the sausage slices on the bread. Place the slices of cheese on top of the sausage.
Cover the cheese with slices of bread with a hole in the center. Crack the eggs and separate the yolks from the whites.
Cut the tomato into small cubes. Chop the green onion finely with a knife, setting aside a couple of pinches to serve if desired. Add chopped tomatoes and green onions to the bowl with egg whites. Season with salt and beat lightly with a fork or whisk. Gently pour the egg and vegetable mixture over the holes in the bread.
Place an egg yolk in the center of each hole. Place the sandwiches in the oven, preheated to 200 degrees, for about 10-12 minutes, until the eggs are cooked as desired.
Hot sandwiches with scrambled eggs, tomatoes, and sausage are ready. Serve them to the table, garnish the salad leaves and sprinkle the sandwiches with the remaining green onions if desired.
