Wash the cauliflower and cut into florets. Cook in lightly salted water for 15 minutes. Drain. Finely dice the ham. Briefly fry the mushrooms and ham in heated butter (margarine). Season to taste with salt, pepper and lots of paprika (both types). Add the cauliflower florets. Mix gently.
Pour into an ovenproof dish. Pour sour cream on top. Sprinkle with grated cheese. Bake at 220 ° C for about 10 minutes.
After gratinating, sprinkle with paprika and chopped chives. Serve immediately.
