Instructions

  1. Boil the prepared asparagus in salted water with a little sugar. Drain.
  2. Roast the breadcrumbs in butter, mix with the sour cream, add the egg yolks, season with the spices and stir until smooth. Butter a baking dish, put half of the asparagus in it and pour a third of the sour cream on top. Place the remaining asparagus on top and cover with the rest of the cream. Sprinkle generously with grated cheese and gratinate the asparagus in the tube. Sprinkle with parsley.
  3. This asparagus variant can be served as a starter or as a side dish, especially with poultry or veal.
