Fry the tartare in a non-stick pan until crumbly. Cut the onions and peppers into small pieces and add to the tartare, sauté briefly. Then add the tomatoes and vegetable broth. Let it simmer for 5 minutes and stir occasionally.
Add paprika powder, sugar and cumin and continue for 1 min. Let simmer temperature. Just before serving, heat the noodles in the soup, stirring occasionally.
Season well with salt and pepper and serve sprinkled with parsley.
If you like it spicier, you can of course use other spices such as chilli, cayenne pepper, etc.
You can also add celery, chopped, to the soup and sauté with the paprika and onion. (We just let them out because we don`t like it)
