Instructions

  1. Fry 3 - 4 strips of the bacon in a pan for 3 - 5 minutes while toasting 2 - 3 slices of white bread. Place the toasted white bread on a large plate and the crispy fried bacon on top. Then place the plate in a preheated oven (approx. 50 - 70 ° C) so that it stays nice and warm.
  2. Leave the onions in a pan with a little clarified butter. Then add the well-drained chanterelles. Be careful, these mushrooms don`t want to stay in the pan if the temperature is too high. It is advisable to lower the temperature a little or to put a sieve over the pan. After approx. 5 - 8 minutes add the spinach. Mix together in the pan for approx. 3 - 5 minutes. Depending on your hunger, appetite and taste, the amount of spinach can be adjusted as required. Season with salt and pepper.
  3. Now beat the eggs with the garlic, stir vigorously and then add to the pan. Stir everything together again for 3 - 5 minutes in the pan.
  4. Now take the plate out of the oven again. CAREFULLY and only with a pot holder, because it is hot! Place the egg with the ingredients on the white bread and bacon and serve.
  5. Optional:
  6. For the guests with the big eyes, a pinch of cream and a spoonful of flour can be added to the eggs. Not too much, because otherwise it won`t really taste like an egg. Season to taste with a little salt and pepper.
  7. Maybe cut up another tomato and place it on a lettuce leaf. But here too, please, no ketchup.
