Cut the lettuce, wash it and let it drain a little in the colander. Drain the mandarins and, if the wedges are very large, cut in half. Mix both in a bowl.

Toast the almonds with sugar in a pan until they caramelize, d. that is, the sugar becomes liquid and brown. Stir constantly! Add the caramelized almonds to the salad, mix in and serve immediately.
Tips: Warning - the almonds get very crispy when they cool down, so watch out for your teeth. The dressing turns brown quickly due to the almonds. But that doesn`t matter! Before roasting the almonds, place the spoon in warm water so that the sugar crust loosens. Also soak the pan immediately.
