Rub the peel of the orange and extract the juice from the orange and the lime as well. Mix the juice with the vinegar and oil, as well as the orange zest. Chop the mint leaves and add. Season to taste with salt, pepper and sugar.
Peel the mango and cut into cubes (approx. 1 cm in size) and add to the dressing. Dice the sheep`s cheese and add to the dressing.
Finally, cut the iceberg lettuce into small pieces and mix everything together. Tastes good with a little ciabatta as a light dinner or as a side dish.
