Instructions

  1. Peel the hard-boiled and cooled egg and cut into very small, fine cubes. Peel and finely dice the shallot. Peel the pepper with the peeler, remove the seeds and cut into very small cubes. Use red pointed peppers, they are sweeter.
  2. Put all the ingredients in a bowl. Now add the mayonnaise, mustard and skyr and mix everything. Season with salt, pepper, sugar and chilli.
  3. Cut the chives into small rolls, finely chop the parsley and put both in the bowl. Season to taste with a squeeze of lemon juice. Mix everything well and let it steep for 30 minutes.
  4. Wash off the cucumber, cut into thin slices and arrange decoratively on plates. Pour the cream in the middle or on top. Arrange the shrimp decoratively. Sprinkle everything again with salt and pepper and drizzle with lemon juice.
  5. Sufficient as a starter or with potatoes in summer, then increase the amount if necessary.
  6. Skyr is a traditional Icelandic dairy product and is similar to thick yogurt. It has a very low fat content of 0.2-0.5% and a very high protein content.
  7. Skyr has also been available in Germany since June 2015. It is made by Arla Food and is available in supermarkets. The taste and consistency cannot be compared with other types of cream cheese.
