Mix 1 tablespoon of oil and the spices to a paste. Rub the meat on all sides with the paste and place in a freezer bag. Store in a cool place for at least two hours, preferably overnight, but it doesn`t have to be. Let the remaining oil get hot and sear the marinated meat all around. Add the onion, carrot and garlic, roughly chopped and also brown. Pour in 250 ml of the stock and cover the meat on a low flame and let it simmer for about 1.5 hours. After half of the braising time, add the remaining broth if necessary. The meat should be done and not dry. The carrot and onion should make the sauce thick and creamy. The sauce can be seasoned or bound as required. Sliced potatoes, pasta and fried rice are ideal. I set the fried rice recipe separately.
