Remove 1 tablespoon of vegetable boiling water, beat with 1 tablespoon of yoghurt and 1 tablespoon of sour cream or 1 tablespoon of creme fraiche, salt, pepper, a trace of garlic and 1 heaped pinch of curry.
Briefly heat this mixture before serving, do not boil and a quick and tasty vegetable sauce is ready without much effort.
I just heat this up in the microwave.
Before serving, add herbs to taste and preference.

I account for the yoghurt as a cup during the day because I use it afterwards.
