Instructions

  1. Wash quinoa (also peeled) in a fine-mesh sieve with warm water until the water runs clear. Drain.
  2. Optionally, you can briefly roast the quinoa with a little olive oil - this is how it best develops its subtle nutty aroma.
  3. Bring two parts of water or broth with one part of quinoa to a simmer in a covered saucepan. After 12-15 minutes, it is done, take it off the stove and cover it for another 10 minutes.
  4. In the meantime, peel the onion and cut into half rings, wash and clean the spring onions and cut into fine rings until they are green. Clean and dice the peppers. Wash and dice tomatoes. Wash the rocket and, depending on the size, cut in half. Cut the garlic into small pieces or press through. Halve the avocado, remove the stone and remove the pulp with a ball shaper / melon cutter or just dice.
  5. Mix everything loosely with the quinoa in a bowl.
  6. For the dressing, mix 2 spoons of olive oil with 3 tablespoons of raspberry vinegar (but also works great with balsamic vinegar or any other vinegar) and a teaspoon of liquid honey or the vegan alternatives, as well as salt, pepper and chilli.
  7. If that`s too sweet for you, you can remedy it with a squirt of lemon.
  8. We like the salad to be slightly warm, but when it is done the next day, it is also very tasty, but you should definitely drizzle the avocado with lemon, otherwise it will turn brown.
  9. There are endless possibilities to modify this salad: z. For example, add a pomelo or orange in pieces or feta, cranberries or goat cheese, it also tastes great with a spoonful of sambal oelek.
  10. We have the salad as a main course, for grilling or simply with pita bread.
  11. Information: Quinoa is not recommended for small children under 2 years of age, as the saponins in quinoa can cause intolerance.
