Ingredients
- 3 tablespoon oil
- 4 cod fillet (s), approx. 2.5 cm thick
- salt
- pepper
- 1 onion (s), finely chopped
- 2 clove (s) garlic, crushed
- 1 red pepper (s), finely diced
- 1 teaspoon coriander, ground
- 1 teaspoon ground cumin
- 1 teaspoon turmeric, ground
- 0.5 teaspoon ½ spice mix, (Garam Masala)
- 400 g tomato (s), fresh or canned, skinned and chopped
- 150 ml coconut milk, (unsweetened)
- 1 tablespoon coriander, freshly chopped or parsley
Instructions
- Heat the oil in a pan, brown the fish in it on both sides, but do not cook through. Season with salt and pepper. Remove from pan and set aside.
- Add the onion, garlic, paprika and spices to the pan and stir-fry for 2 minutes. Add the tomatoes, bring to the boil and simmer for 5 minutes.
- Place the fish in the pan with the vegetables and simmer for about 8 minutes until cooked. Take the fish out of the pan and keep it warm.
- Add coconut milk and coriander or parsley to the pan and heat slowly.
- Pour the sauce over the cod fillets and serve immediately.
- Rice or naan bread goes well with it.
