Instructions

  1. Heat the oil in a pan, brown the fish in it on both sides, but do not cook through. Season with salt and pepper. Remove from pan and set aside.
  2. Add the onion, garlic, paprika and spices to the pan and stir-fry for 2 minutes. Add the tomatoes, bring to the boil and simmer for 5 minutes.
  3. Place the fish in the pan with the vegetables and simmer for about 8 minutes until cooked. Take the fish out of the pan and keep it warm.
  4. Add coconut milk and coriander or parsley to the pan and heat slowly.
  5. Pour the sauce over the cod fillets and serve immediately.
  6. Rice or naan bread goes well with it.
