Instructions

  1. Peel the potatoes and cut into small pieces. Bring the broth to a boil and cook the potato pieces in it.
  2. In the meantime, peel the carrots and grate them coarsely. Wash the leek and cut into rings. Cut the sausages into slices or leave them whole.
  3. Take the pot with the potatoes off the stove. Strain and collect the vegetable stock. Then strain the potatoes, depending on your taste, leave them a little coarser or keep pieces of potato. Now add curry powder. Dilute the mixture with the collected broth as required until a soup or stew is created - depending on your taste.
  4. Note: I take about 1-2 tablespoons of curry powder - but it depends a lot on the curry powder you use for it. But don`t try it yet, it doesn`t taste good yet.
  5. Add the carrots and simmer gently for another 5 minutes. Then add the sour cream and stir thoroughly. Add 4/5 of the leek. Add the sausages and let everything simmer again for about 5-10 minutes. Season to taste with curry powder, salt and pepper.
  6. Garnish with the rest of the leek (it is best to remove the green leek) and serve immediately.
