Peel and finely chop the onion, garlic and ginger. Fry in a pan with hot oil for a few minutes. Then add the spices and fry for another 1 - 2 minutes until the spices develop their aroma.
Add the prawns and coconut milk to the pan, season with salt and pepper. Bring to the boil and simmer for about 2-3 minutes.
In the meantime, wash the fresh coriander and pat dry. Set aside a few twigs for the garnish and finely chop the rest.
Place the prawns in a serving dish and sprinkle with the chopped coriander. Garnish with the coriander sprigs and serve immediately.
If you don`t like fresh coriander, you can leave it out, as it always has a slightly musty taste.
