Mix the first 6 ingredients in a bowl and add the chicken. Stir well and leave to marinate in the refrigerator for at least 30 minutes. Do not marinate overnight.
Heat the oil in a pan and fry the onion over medium heat. Add the garlic and let it brown a little. Deglaze with the water, add the peanut butter, soy sauce and sugar and simmer until everything is well mixed. It should be a creamy, not too thin sauce. Remove from heat and stir in lemon juice.
Put the marinated chicken on the skewers and fry in the pan or on the grill for about 5 minutes on each side. Pour the peanut sauce over and serve.
