Instructions

  1. Cook the rice the day before, it should definitely be cold by now.
  2. Cut spring onions and carrots into fine slices or cubes and fry lightly in hot oil over medium heat for approx. 4 minutes. Add the chopped mushrooms and stir-fry for another 2 minutes. Put the cold rice in the pan and mix everything together well. Fry for another 10 minutes.
  3. Now spread the rice on the edge of the pan. Place the eggs in the middle of the pan and let them set while stirring constantly. Add the peas and corn and mix everything together well. Season the rice to taste and fry as long as you like. Garnish with a dollop of yogurt, spring onion slices and a lemon (or lime) wedge.
  4. Tips: The dish goes faster in a wok. Rice can also be exchanged for noodles.
  5. Leeks, zucchini, paprika, ginger, broccoli, chilli flakes, coriander leaves, peanuts, curry powder etc. also go well with it.
