Instructions

  1. Preheat the oven to 180 ° C. For the batter, heat the Guinness and butter in a small saucepan until the butter is completely melted. Stir in the cocoa powder and let it cool down a little.
  2. Beat eggs and cream until foamy and then fold in the Guinness butter mixture. Mix the flour, sugar, baking powder, and salt in a large bowl. Now mix both mixtures and then distribute evenly over a 12-cup muffin pan. Bake the dough for about 17 minutes.
  3. Melt the chocolate for the filling. Heat the cream and mix it with the melted chocolate (you can do both at the same time in a vessel in the microwave. With regular stirring it is faster and easier than in a water bath or similar!). Then add butter and whiskey and stir until a homogeneous mass is formed.
  4. Now hollow out the already baked cupcakes. In this case, this works perfectly with the screw cap of the whiskey or Baileys bottle! Simply drill with the lid vertically, like when cutting out cookies, from above into the middle of the muffin and put the cut-out rest aside or consume directly if necessary! The dough that has been cut out is no longer needed for the recipe, but it already tastes delicious! Evenly fill the hollowed-out muffins with chocolate cream.
  5. For the frosting, beat the butter for about 5 minutes until frothy. Gradually add the powdered sugar and stir in. Add the Bailey`s and mix the whole thing again briefly. Now place the frosting on the cupcakes with a piping bag or similar and decorate as desired.
  6. This recipe can also be converted into a cake with the same quantities! Simply bake the dough in a springform pan (the baking time will then increase), cut in half horizontally, fill with chocolate cream and coat the outside with frosting and garnish.
