- Briefly rinse the chicken pieces with cold water, pat dry and rub vigorously with salt and pepper.
- Heat the olive oil in a roasting pan and fry the chicken pieces all around until golden brown.
- Put the sage, bay leaf and garlic in the roasting pan and deglaze everything with the wine. Cover and let simmer for 25 minutes.
- Add the diced tomatoes and olives and cover and simmer for another 20 minutes.
- Season to taste with salt and pepper.
- Oven-fresh baguette and salad go well with this.
