Melt the butter in the pan and fry the noodles in it until they turn lightly brown.
Wash and clean the rocket.
Spread the potato noodles on the plates, sprinkle with dried tomatoes and spread 1 - 2 tablespoons of crème fraîche on each of them. Finally, put the rocket on top and sprinkle with the parmesan.
The quantities can of course be varied as desired.
