Drain and dice the mozzarella. Core the 4 tomatoes and also dice the pulp and mix with 1 tablespoon of lemon juice. Wash and drain the rocket. Place on a wide platter and arrange the other ingredients on top.
Mix the oil with the vinegar, the remaining lemon juice, salt, pepper and a pinch of sugar. Pour over the salad. Garnish with fresh parsley and fresh basil
