Slit the jalapeno lengthways with a pointed and sharp knife, but do not cut through the chilli. Scrape out the seeds and partitions with a small ball cutter or spoon.
Now some coriander leaves, some ham and cheese, cut to the right size, fill the jalapeno and wrap with half a slice of bacon.
Prepare the grill for indirect grilling and grill the poppers over medium heat until the bacon is crispy.
