Wash and peel the pears, cut into fine wedges or small pieces. Pour into a tall saucepan with all the other ingredients except the chocolate. Bring to the boil while stirring, let simmer for 5 minutes.
Take it off the plate. Remove the cinnamon stick, add the chocolate and let it melt. Puree the mixture until smooth with the magic wand.
Put it on the stove again and let it boil briefly.
Make a gelling test and then pour it hot into prepared twist-off jars.
