First bring the milk to the boil with sugar, salt and vanilla. Turn off the stove and stir in the semolina. Now it has to swell for about 4 minutes, stirring it from time to time, preferably with a flat whisk.
You can now whip the egg whites stiff with a pinch of salt.
When the semolina is ready, first stir in the egg yolk and then carefully fold in the egg whites.
Now you can enjoy the semolina with a little brown sugar, honey or fruit warm.
If you prefer to eat it cold, I would only fold in the egg whites shortly before consumption so that no air is lost.
