Instructions

  1. First, crumble the yeast in a bowl, add the teaspoon of salt and vanilla sugar and let the yeast dissolve. Once that has happened, add the other dough ingredients and knead them with the hand mixer into a homogeneous dough in about 5 minutes. The dough should be relatively soft, it doesn`t matter if it sticks, it just mustn`t be too moist. Now cover the dough in a warm place (heating; microwave on the lowest setting for 10 minutes) until its volume has doubled.
  2. Now the dough is kneaded again for 1-2 minutes with the hand mixer and then formed into 8-9 pigtails per tray, which are then left to rise covered for about 10-15 minutes.
  3. Now you should preheat the oven to 200 ° C top / bottom heat.
  4. Finally, you brush the pigtails with egg white and sprinkle them with crystal sugar and then it goes for about 15 minutes in the lower third of the oven. It is important to use steam when baking, i.e. to generate steam, either by pouring some water on the bottom of the oven or by spraying a little bit into the oven with a flower sprayer.
  5. Tip: You can also make the braids in advance; you just have to freeze them fresh after baking and heat them in the microwave for 1-2 minutes at 250 watts on the desired day. They stay super tender and don`t get as dry as if you warm them up in the oven.
