Dice the onions and garlic and sauté in olive oil. Add the chopped parsley and sauté briefly. Chop the sausage and add it too. Season with plenty of sweet paprika powder.
Add the strained tomatoes, broth and diced potatoes. When the potatoes are done, add the beans with the stock. Season to taste with salt, paprika and pepper.
The stew can be lengthened with puree tomatoes, white beans, potatoes and broth. When warmed up the next day, it tastes almost better!
